1 spaghetti squash
1 jar organic marinara sauce
1 lb. ground turkey (Italian flavored)(browned)
1 tub of low-fat cottage cheese
low-fat mozzarella cheese
1. Cut squash in half and remove seeds. Place in microwavable dish, with a bit of water for 8-10 minutes, let cool. Scrape squash out with fork (comes out in strings like spaghetti). Place in baking dish.
2. Spoon marinara on squash, then layer the rest of ingredients and top with cheese.
3. Bake for 5-10 minutes on 400.
*I just kept it simple, but you can also add mushrooms, spinach, etc!
Wellness is attained through proper nutrition, exercise and mental well-being. Those elements are the focus of this blog. I hope my posts contribute to a healthier body and state of mind.

Going Grain-Free
I have tried many different approaches to eating, in my pursuit for optimum health. I have added and eliminated ingredients from my diet for many years; I have been vegetarian, I have been vegan, I have tried all raw food, etc and so on. I have found out what works for my body and what doesn't. Today I will start my grain-free diet!
Grains have been linked to allergies, IBS, joint pain, diabetes, autoimmune disorders, obesity, mental function and so many other illnesses. I won't go so far as to say grains cause these diseases, but I will say, I believe they play a HUGE part! I for one do not want to rely on medication to fix these problems, if they can be remedied through proper diet. I will report back on my progress and also post some recipes. If you suffer from any of the issues I mentioned, come join me and be grain-free!!!
BTW--coconut flour is my new favorite! Let the baking begin!!!
