My New Favorite Protein Bar!!!
Being the health and fitness nut that I am, I have tried TONS of protein bars! Some good, some not-so-good. Not only do the bars I select have to be nutritionally good for me to eat or approve for my clients, but they have to taste good too! These babies have both things going for them!!! But they *are* made by the makers of "Greens Plus" (my favorite brand), so go figure! Not only are these tasty and nutritionally balanced, but they are raw, vegan and organic too!!!

Veggie Spring Rolls w/spicy Peanut Sauce
Rolls:Rice paper
Avocado slices
Carrots (thinly sliced)
Cucumber (thinly sliced)
Basil
Romaine lettuce (thinly sliced)
Vermicelli (optional)
Tofu (optional)
Dipping sauce:
4 heaping tablespoons of natural peanut butter
Juice of 2 limes
*about* 3 teaspoons of sugar (or alternative to taste)
1 teaspoon *or so* of hot pepper sesame oil
1 chili pepper
*about* 2 teaspoons of low sodium soy sauce
1-2 teaspoons rice wine vinegar
1 clove of garlic
1-2 teaspoons warm water
*These are just estimates, as I never measure ingredients when I cook. Just use these ingredients and make it to suit your own personal taste!!!
**Moisten rice paper until pliable.
